Pre-heat the oven to 180°C/350°F/Gas Mark 4. Brush 2 trays with Original Whirl Butter Alternative.
Place the sweet potato halves on a tray, skin side up, brush with Original Whirl Butter Alternative pop in the oven and bake for 30 minutes
Put the dry chickpeas in a bowl with the paprika and 1tbs Original Whirl Butter Alternative. Coat well and place on a baking tray and bake for about 30 minutes till crisp.
For the filling, mix together the Lion Mint Sauce, tahini, pomegranate seeds, onion, red and yellow pepper, sweet drop peppers and coriander.
When cooked remove the potatoes and the chickpeas from the oven.
Using a fork, loosen the fleshy part of the potato and add a little Original Whirl Butter Alternative to each one. Top with some of the filling and a sprinkle of the crispy chickpeas and serve immediately.
