Pre-heat the oven to 180°C/350°F/Gas Mark 4. Brush an ovenproof dish with Original Whirl Butter Alternative.
Boil the cauliflower florets for 5 minutes then drain well before placing in the ovenproof dish.
Heat the Original Whirl Butter Alternative over medium heat in a heavy bottomed pan.
Add the flour and beat well to form a thick dough continue to beat over the heat for 3 minutes.
Start to add the milk a small amount at a time beating well to form a dough before adding more. Continue to do this till all the milk is used up it will be less doughy each time and start to look more like a sauce. Bring to a boil stirring constantly so as not to catch on the bottom of the pan.
Now add the nutmeg and 100g cheese stirring constantly season with a little salt and pepper to taste.
Pour the sauce over the prepared cauliflower coating well then sprinkle the remaining 50g of cheese over the top.
Bake for 20 minutes till the top is nicely browned.
