Cut the haddock fillets into 2 or 3 strips lengthways depending on size to make large goujons. Season with salt and pepper.
Place the beaten eggs in a large dish, divide the flour between 2 plates adding the lemon zest, and lemon thyme to one of them and season with some fresh black pepper.
Now coat the goujons first with plain flour, then the egg and finally with the seasoned flour.
Heat 2tbs Original Whirl in a large frying pan over medium heat. Pan fry the goujons for 2-3 minutes then flip over, add another 2tbs Original Whirl to the pan and cook for a further 2-3 minutes - remove from the pan.
Add the remaining 2tbs Original Whirl, lemon juice and zest then heat gently and pour over the haddock goujons.
Top Tip: This works well with other white fish fillets such as cod, plaice or tilapia.
