How to choose the right oil

Both high oleic sunflower frying oil and rapeseed oil are stable at high temperature, and resistant to oxidation, which gives them a naturally long fry life. In fact, high oleic sunflower oil has the longest fry life of any liquid oil. Both are high in monounsaturated fat and low in saturated fatty acids.
